I almost always harvest after 8 months, but I always wait for the plant itself to prove it to me. The leaves become faded, and eventually dry. On many occasions I have waited until flowering and for the flowers to wither.
You dig up the soil a little, and the tubers are there, very close to the surface; That's the time to find the spicy bunches of Ginger and the well-flavored Turmeric.
