You could also not do the homeschooling, or just a little bit, so your vacation is extended.
NJOY the SNOW with your little one, since back in Ecuador, snow can only be seen on screen.

She already had 4 weeks of vacation and skipped 2 weeks of school, so a little schooling is due :-D Also so she gets back into the rhythm. Waking up, breakfast, brushing teeth, school, and then more vacation. It's not like we're going to be at it for hours :-D
